Snacks for the week

I haven't done any baking for the last fortnight as I didn't want to cough my germs all over everything so DH has been buying biscuits, NOT at my request though. He has these binges every so often but it's his money he's spending, not mine, so I don't comment.

I was feeling like something nice to eat for afternoon tea yesterday and I had some zucchini I wanted to use up, so I'd already decided to make zucchini bread, and I thought I'd also try the easy and cheap biscuit recipe of Paula's, that I'd copied from that thread, on the Down to Earth forums


My goodness, did it make a bunch of goodies!!


 30 choc chip biscuits and the same of sprinkles ones.....


....and 24 fat jam drops....Well, there were before the two legged mice dived into them!!



The biscuits are about twice the thickness of bought ones and 2" in diameter and the jam drops are roughly 3" in diameter. When cooled the biscuits went in the freezer but as I'd cooked the drops with the jam already in them they have to be eaten. **Note to self - cook drops jamless in future so they can be frozen!


I made the zucchini bread with wholemeal flour this time, as I used it for the biscuits, and it tastes wonderful. The recipe makes two loaves so I froze one loaf and gave half of the other (and some bikkies) to DH's niece as she and her two little ones have been ill and I thought a little treat for afternoon tea would be nice  ; ). It's a bit more-ish and I'm ashamed to say I've eaten quite a lot of the remaining half, with butter.



As I usually have a cup of tea around this time in the afternoon I think I'll have another piece of zucchini bread. Anyone want a slice...with butter or without?!

  1. With butter Please! ;) I miss afternoon tea - growing up it was always waiting for me when I got off the bus. To have one afternoon tea with my Grandma would truly be heavenly. She's been gone since 1992 and I miss here dearly - thanks for sharing your tea and biscuits.

  2. Wow what a bake off!! I always use that biscuits recipe but I found it in a magazine. I use that recipe to make the biscuits for my market stall, so easy and you just divide the mixture up and put in what ingredients you want. How good are jam drops, I made them for my last 2 markets and they all sold out...an oldie but a goodie!!

  3. Just FYI you can freeze the dough not just the biscuits. That way you can cut them from a log while thawing and add jam to them while on the tray and in the oven for 15 minutes and they're like you made them today even though they were from a month ago.

    1. Rai, thanks for that info. I just baked the lot and froze the "extras" as the electricity charges here have gone up with each of the last 2 bills so I thought I'd do a big bakeoff rather than heat the oven up for each separate batch as we need them. DH's relatives just drop in unannounced much of the time (very inconvenient) so at least now there's refreshments ready that only need a few minutes to defrost when that happens.

    2. Ahh I see. I only have a toaster oven that only needs a moments notice to heat up and cool down so I don't have that problem. Plus boyfriend and I love eating cookies warm and soft straight from the oven.

  4. With butter please:) It is such a shame the 'old fashioned' afternoon tea with cups and saucers, and cake is almost a thing of the past! Love the look of those biccies as well! You have a very productive baking session.

  6. Hi Robyn, thank you for the apple cake recipe . i did comment on it when you did it but got frustrated when it wouldn't go up . Hopefully it will work this time ..I think we need a new computer , it has been very slow lately.
    Haven't tried the cake yet though...its my school holiday project with the kids!

  7. Who doesn't love a homemade cookie? I think part of the pleasure of baking is the all round appreciation of the family members who get to scoff it down and hearing them say 'Yum, Mum!Thanks!' ....
